Happy St. Patrick's Day!!!
Today is a great day to show your family and friends how to celebrate this day with real food. (I never really understood the idea of eating green pretzels and drinking green milk.)
Enjoy these three delicious naturally green foods below!
Serves: 2
2 organic green apples, cored and chopped
5-6 stalks of celery (with leaves)
1 1/2 cup spinach, washed
1 banana
½ organic cucumber
Juice of ½ fresh lemon
Water as needed to thin
1 Tbsp chia seeds
One young Thai coconut (water and inside flesh or shredded coconut flakes)
Add all ingredients to the blender and mix till smooth. Enjoy!!
Spinach Strawberry Salad

This recipe is all time favorite of my clients and spring cleanse participants. If you want it to be totally green, use chunks of avocados instead of the strawberries.
Makes 4 small salads or 2 large ones
8 oz. baby spinach
1 cup sliced strawberries
¼ cup chopped pecans, lightly toasted
Balsamic & Honey Dressing:
¼ cup balsamic vinegar
¼ tsp Dijon mustard (like Annie's)
1 Tbsp raw honey
¼ cup extra virgin olive oil
Salt and pepper to taste
Poppy seeds.
Whisk together balsamic vinegar, honey, extra virgin olive oil and salt and pepper. Toss the spinach leaves and strawberries with ¼ cup of dressing.
Divide the spinach and berries amongst two plates and sprinkle each with 2 tablespoons of raw pecans. I also like to add some poppy seeds for some fun texture and flavor.
Get Up and Go Guacamole
2 ripe avocados, mashed
4 scallions (spring onions), thinly sliced
2 cloves garlic, crushed
3 Tbsp fresh lemon juice ((or dip a tooth pic into lemon essential oil by Young Living)
1 Tbsp lime juice (or dip a tooth pic into lime essential oil by Young Living)
1 small handful coriander leaves, finely chopped
Celtic salt & black pepper to taste
Place all ingredients in a bowl and season with a little Celtic salt and freshly ground black pepper. Mix everything together thoroughly, cover and refrigerate until ready to serve. Serve with raw vegetable sticks or over a salad.
