Rich Flourless Brownies

This brownie recipe is one of my favorite chocolate treats. It is simple to make, rich and moist. You may add some nuts to the mix or enjoy with some fresh raspberries.

Ingredients:

1/2 cup (1 stick) unsalted butter, cut into pieces
3/4 cup almond flour
1/4 cup unsweetened cacao powder
1/2 tsp baking powder (aluminum free)
1/2 tsp sea salt
8 oz bittersweet chocolate chips (Enjoy Life brand )
1/2 cup coconut sugar (or less !!) 
3 eggs

Directions:
  1. Preheat oven to 350 F.
  2. Butter your baking pan or line with parchment paper.
  3. Combine almond flour, cocoa powder, baking powder and salt in a bowl.
  4. Melt butter and chocolate in a heat proof bowl set over a sauce pan of gently simmering water.
  5. Remove bowl from heat.
  6. Add coconut sugar.
  7. Stir to combine.
  8. Add eggs.
  9. Mix together.
  10. Stir in flour mixture just until moistened, do not over mix. Make sure there are no clumps of baking soda.
  11. Transfer batter to prepared pan and smooth top with spatula.
  12. Bake in oven until toothpick inserted in the middle comes out with only a few moist crumbs. 25-30 minutes.
  13. Let pan cool on rack and enjoy!

My daughter, who is the baker in our family, whips this up in no time. Here she is during the Blizzard of 2016 having fun in the kitchen after being outside for hours building an igloo..
